Tlaxcalan cuisine is a gastronomic voyage

Visitors from the five continents are delighted by the Tlaxcalan cuisine in its gastronomic area arranged inside the Tianguis Turístico 2023 in CDMX.

When inaugurating this stand, Governor Lorena Cuéllar Cisneros highlighted that for the first time in the 47 editions of the Tianguis Turístico, the entity has a space to publicize gastronomy.

For the first time in the history of tourist tianguis, Tlaxcala has a stand to publicize our traditions, our gastronomy, and all the wonderful places that we have in our state… we are very happy to be able to reach many corners of the country and the world

Among the dishes that are the delight of diners are: Taco Cacaxtla (mutton mixiote, cured nopales, molcajete guacamole, lemon, cilantro, and cambray onion); Taco Malinche (crust of Tlaxco artisan cheeses with hoja santa, rib eye chicharrón, pot beans, green sauce, and sprout salad), as well as Tamal La Escondida (epazote escamoles sauce, fresh cheese, creamy tatemado poblano pepper) and the Tlacoyo Soltepec (scented broad bean with avocado leaf, purslane salad and red mole from Tlaxcala).

As a complement, there is cured Mezontete pulque, cured pine nut pulque and artisanal water (from toasted amaranth, cinnamon, and cocoa).

Matuma mole, chamorro, peasant bread, grasshoppers and chicatanas, quelites, among other stews, are also part of the menu that is savored by demanding palates concentrated in the Tianguis Turístico 2023, which in this edition takes place from March 26 to 29 at the Citibanamex Center in Mexico City.
