This easy slow-cooker meal combines protein and carbohydrates for a complete dinner, all in one pot. Not only is this slow cooker recipe super easy, but it’s also very inexpensive to make. Part of what makes this recipe inexpensive is using ingredients you’ll likely already have in your pantry. As long as you have spices and broth on hand, you won’t need to buy much more than a few main ingredients to make Slow Cooker Beef and Potato Au Gratin. Your family will love this recipe so much, they’ll ask for more!

Here’s what you’ll need:

  • 1 lb. of ground beef (use beef with a higher fat content for a moister end product)
  • 3 lbs. of peeled russet potatoes, slicked to ¼ inch in thickness
  • 1 TSP paprika
  • 1 TSP parsley
  • 1 Cup of thinly sliced white onion
  • ½ TSP garlic powder
  • 1 TSP salt
  • ¼ TSP pepper
  • 3 Cups Shredded Sharp Cheddar Cheese
  • ½ Cup beef or chicken broth

Steps to Make

  1. Start cooking your ground beef on the stovetop and drain the remaining fat. Add salt and pepper to season while it cooks.
  2. In a small bowl, combine the spices (paprika, garlic powder, parsley, and salt & pepper).
  3. Add half of your cut potatoes to the bottom of your slow cooker. Sprinkle half of the onions on top and half of your seasoning mixture. Then, add half of the meat mixture and half of the sharp cheddar cheese.
  4. Repeat by adding another layer with all of the remaining ingredients.
  5. Add broth on top of both layers.
  6. Cover and set your slow cooker to high for 4 hours.
  7. Serve and enjoy!

Slow Cooker Mongolian Beef with Rice

If you find your family is always asking for take-out, this recipe is for you. Inspired by traditional Asian cuisine, this slow cooker recipe will help you save money when feeding the whole family. Not to mention, it’s so much healthier than ordering takeout! To make this recipe, you’ll need the following ingredients:

  • ¼ Cup Cornstarch
  • 1.5 lbs. of steak (flank)
  • 1 Tsp Sesame oil
  • 2 Cloves Garlic, minced
  • 1 TSP Fresh Ginger
  • ¼ TSP Red Pepper Flakes
  • ½ Cup Chicken Broth
  • ½ Cup Soy Sauce (Note: Try one of these healthier soy sauce alternatives, if desired)
  • ¾ Cup Water
  • 1 Cup Grated Carrots
  • ½ Brown Sugar
  • 2-3 green onions, chopped
  • Salt and Pepper
  • White Rice, cooked

Steps to Make:

  1. Cut your flank steak into small strips and add them to a plastic bag. Mix in cornstarch and shake up your bag well to coat the steak thoroughly. Do not try making this recipe with another type of steak, or it may not come out as desired.
  2. Add all remaining ingredients to the slow cooker and mix well. Then, add coated flank steak and mix the sauce well.
  3. Cover your slow cooker and cook for about four to six hours on low. Your sauce should thicken as it cools. Add salt and pepper, if desired.
  4. Before serving, add chopped green onions and serve over white rice. Be sure to keep the extra sauce in the slow cooker to help moisten your rice.
