To start you’ll need a bag of fingerling potatoes, half of an onion (white, or red tastes best), four cloves of garlic, cayenne pepper, fresh ground pepper, salt, butter, and olive oil. Next, let’s begin our prep work, preheat your oven to 450. 

Then take your potatoes, wash them, and cut them into small chunks. After you’ve cut your potatoes up, take a large bowl of cold water, and soak your potatoes for around fifteen minutes. Then dab the potatoes dry with a paper towel. Next, take your baking sheet, and lay a large layer of aluminum foil on top of it. After that take your butter and gently rub a thin layer of it on the aluminum foil you’ve just laid down. Then grab your potatoes and lay them down on the baking sheet. Afterward, lay down your onions and your garlic. After you’ve done that, then take your seasoning and cover the potatoes with it. This part can be completely to taste, but we tend to favor a lot of salt, a lot of cayenne, and just a pinch of pepper. 

After you’ve completed seasoning your potatoes, grab another layer of foil that we’ll make a tent with. Flip the foil so that the side that faces your potatoes is facing up. Now it’s time to take your olive oil and smear a thin layer onto the foil. Cut many vents into this foil and then make the top of your tent with the foil over your potatoes. Now that you’ve finished your prep work, pop your potatoes into the oven and set a timer for 20 mins. After your timer goes off take your potatoes out and take off the top layer of your foil. Stir the potatoes up add salt, and then toss them back in the oven for another 20 mins. After those last 20 min up, you should have a sheet of incredible and delectable roasted potatoes!

Oven Baked Brussels Sprouts

For our next entry, we thought it was important to go for something simpler and a little more nutritious than our potatoes. But don’t worry, it’s no less delicious! First, what you’ll need are three strips of bacon, three cloves of garlic, salt, pepper, paprika, onion powder, and cayenne pepper. To start, preheat your oven to 400 degrees. Then what you’ll want to do is prepare your brussels sprouts. Wash your brussels sprouts in hot water, and then cut them in half. After you’ve finished getting your sprouts ready, start frying up your bacon (lean towards the crispy side for these). Once the bacon is done, cut it up into small chunks. Next, take your sheet and spread a thin layer of olive oil onto it. Afterward, place your sprouts onto your cooking sheet. Then add your seasoning, the sprouts are best when you use equal parts of your spices. If you’re looking for sprouts with a little bit more of a kick then favor the cayenne and paprika. If you’re looking for something savory then use more salt than spice. Now that the seasoning is done, spread the cut-up bacon bits over your sprouts. To finish it off then take your olive oil and quickly add a top layer of olive oil over your brussels sprouts. Finally, pop your sprouts into the oven for 40 min. Keep watch to make sure they crisp up but don’t burn. Once your timer is up take them out and enjoy!
