Veracruz chef creates the Axolotl Tamale to support the conservation of this endangered species

Chef Audrey Gutiérrez, originally from the state of Veracruz, created an axolotl tamale, which she named Wow Xolota, and with this, she seeks to support its conservation.

It is a sweet pink tamale, prepared with purple tuna and blueberry macerated in cochineal sotol. They serve it on brioche bread covered in red fruit pastry cream.

You can try it, upon request, on February 2, 2023, at the Axolote Museum in the Álvaro Obregón mayor’s office, in Mexico City. They will only prepare 350 tamales and each one will cost $85 pesos.

An incredible work of culinary art. There are also other flavors such as cocoa mass filled with macadamia marzipan, carrot cake, and red velvet.

This Mexican amphibian is close to extinction.
